Dr Seuss Green Eggs and Ham Cookies Recipe

These green eggs meringue cookies are perfect to celebrate Dr. Seuss's birthday on March 2nd!  They're not very hard to make and go perfectly with one of my favorite Dr. Seuss books, Green Eggs and Ham.  Make some for a class party at school, or for a fun treat at home!  Here's the recipe:

Dr Seuss Green Egg Meringue Cookies

Makes 25 cookies

INGREDIENTS

• 4 egg whites
1/2 tsp cream of tarter
1/2 C sugar
3/4 C powder sugar
1 tsp vanilla
leaf green food coloring 
2 disposable piping bags 
cookie sheet lined with parchment paper

DIRECTIONS

Preheat oven to 225 degrees.  In a standing mixer, combine the egg whites and cream of tarter.  Mix until soft peaks start to form.  

Continue to mix while alternating between the two sugars, add 1 TBSP at a time, ending with powder sugar.  Continue to mix until stiff peaks form again.

Scoop 1/2 cup of the meringue into a bowl and add a few drops of green food coloring and mix until combined.  Scoop the green into one piping bag and the rest of the meringue into the second piping bag.

Cut the tip off the piping bag and pipe out an egg shape onto the cookie sheet.  Depending on how big you pipe the eggs, you can about 6-12 onto a cookie sheet.  Cut the tip off the green piping bag and pipe a small dot onto the white meringue.

Bake in the oven for 1 hour.  Let cool for a few minutes before enjoying!
